How to Make Sweet Potato Fries & Red Pepper Hummus

INGREDIENTS

PREPARATION OF THIS HEALTHY RECIPE

1. Preheat oven to 450F.

2. Peel sweet potatoes and cut lengthways to resemble a french fry.

3. In a small bowl, combine ghee and rosemary and coat sweet potato fries with this mixture. Then, spread evenly over a baking tray lined with parchment paper.

4. Bake for 20 minutes, turn and continue to cook for another 20 minutes or until starting to crisp.

5. At the same time on a separate oven tray, roast red bell peppers with 2 tbsp olive oil for 20 minutes until skin turns brown and soft.

6. Then, blend cooked chickpeas, tahini, cumin, garlic, lemon juice, remaining 2 tbsp olive oil, roasted red peppers and pinch cayenne to a smooth consistency.

7. Serve alongside freshly cooked sweet potato fries.

Despite the rich and creamy texture of this hummus, it is supportive for Kapha types as the astringency of chickpeas dries excess Kapha water retention and congestion while the red pepper and cayenne and warmth and lightness to ease digestion.

Enjoy this dish as soothing snack after a long day at work, or serve alongside some fresh fish as a dinner option. Chickpeas contain high levels of tryptophan, an essential amino acid to promote sound sleep and balance emotions. This, teamed with the sweet and satisfying taste of sweet potato will help you relax and unwind. The complex carbohydrate of sweet potato and protein content of the hummus will keep you full and tummy satisfied.

It is ideal to cook the chickpeas yourself in this recipe. To do so, soak overnight, rinse and simmer in boiling water for about 1 hour and 30 minutes. However, if you are in a rush or want to whip up a quick evening snack, you can use pre-cooked chickpeas.

The 6 Tastes

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body. Cravings for food with certain tastes indicate your body is craving specific medicinal results from food. Taste is experienced on the tongue and represents your body's reaction to foods. Sweet taste causes physical satisfaction and attraction whereas bitter taste causes discomfort and aversion. Kapha should use less sweet taste while Vata and Pitta would benefit from using more sweet taste. One of the first signs of illness is that your taste and appetite for food changes. The Three Doshas / Body Types
