How to Make Sweet Potato, Purple Cabbage & Radish Taco

PREPARATION OF THIS HEALTHY RECIPE

  • Additional Ingredient: 8 taco shells

1. Preheat oven to 400F.

2. Peel and cube sweet potato and add to oven dish with ghee, garlic, chilli and cumin.

3. Toss to ensure sweet potato fully coated, then bake for 30 minutes until tender.

4. Shred cabbage, chop walnuts and finely slice radish.

5. Blend avocado, juice of lime and salt.

6. Layer ingredients in taco shells as you like and garnish with raisins.

John also directs the Joyful Belly College of Ayurveda, offering professional clinical training in Ayurveda for over 15 years.

John's hobbies & specialties include advanced digestive disorders, medieval Catholic philosophy, & botany. He holds a bachelor's degree in mathematics from Harvard University. John, his wife Natalie and their 8 kids live in Asheville, NC
