PREPARATION OF THIS HEALTHY RECIPE
1. Preheat oven to 450F.
2. Wash sweet potato and chop into medium chunks, leaving the skin on.
3. Spread evenly over a lined baking tray and add ghee.
4. Sprinkle with salt and thyme. Bake for 40 minutes, turning halfway.
5. Meanwhile, add fresh beet greens to a large salad bowl.
6. When cooked, add the sweet potato to the greens, followed by crumbled goats cheese and black pepper.
