PREPARATION OF THIS HEALTHY RECIPE
Use the corn flour to make tortillas, or buy pre-made tortillas.
1. Slice 1 onion 1/8" thick. Chop garlic. Sautee onions on frying pan in coconut oil until they turn translucent. Add garlic and sautee an additional thirty seconds.
2. Chop swiss chard and add to frypan with 1/4c water, salt, & a pinch of red pepper flakes. Cover and bring to a boil. Boil fifteen minutes or until tender. Remove cover and boil off excess water to concentrate flavors.
3. Clean and lightly grease the frying pan with coconut oil. Toast 4 corn tortillas or medium heat until just beginning to brown.
4. Serve the veggie taco filling in the corn tortillas.

I just made this delicious gem today for my lunch and I was thoroughly satisfied! I loved the flavors of the garlic and onion and the cayenne pepper was just right. I loved how it tasted with the corn tortillas. If you love swish chard and onions then this recipe is definitely for you! It's so easy to make, full of flavor and so satisfying. :)

Loved this way to get my swiss chard in! Toasted a couple corn tortillas and added some vegan, non-dairy Mexican cheese shreds. Yummy and not to bad for a Kapha like me. So light. Only wish the hubby would try...
