How to Make Tarragon and Pine Nut Quinoa

PREPARATION OF THIS HEALTHY RECIPE

Use fresh tarragon whenever possible, for the extraordinary improvement of taste that fresh herbs offer.

1. Dry roast pine nuts in a large pot on medium heat until browned. Be very careful as the nuts start to brown, as they will burn quickly. Meanwhile chop 3-4 sun dried tomatoes and 10 tarragon leaves.

2. Add quinoa to pot and continue roasting another 60 seconds.

3. Add olive oil, salt, sun dried tomato and 1c water. Bring to a boil, then lower heat and cover. Simmer for another 20 minutes or until quinoa softens.

4. Mix in fresh tarragon and parmesan cheese. Add salt to taste.
