How to Make Tofu Coconut Curry with Asparagus & Basil

INGREDIENTS

PREPARATION OF THIS HEALTHY RECIPE

Note: This recipe uses fresh basil, not dried.


  1. Peel potatoes and cube. Place potatoes in a medium pot with salt, black pepper, turmeric, curry powder, and red chili flakes. Cover with water and bring to a boil. Then lower heat to medium. Keep uncovered.
  2. Mince onion, garlic and ginger. Saute in 1 tbsp coconut oil until translucent. Add to pot.
  3. Break the stiff, inedible bottoms from the asparagus stalks and discard. Chop stalks in 1 inch pieces. Once potatoes are beginning to soften (about 15 minutes), add chopped asparagus and coconut milk. Bring to a boil then lower heat to simmer.
  4. Meanwhile, chop tofu into cubes. On medium heat, fry tofu in remaining coconut oil until tofu begins to brown.
  5. Once potatoes are soft, remove from heat. Add tofu, fresh basil, and lime juice to pot. Stir gently, from the edge of the pot, then lifting the spoon gently in the center to avoid crushing potatoes.
Serve hot. Optionally garnish with lime zest.
