How to Make Vanilla Roasted Butter

PREPARATION OF THIS HEALTHY RECIPE

Use vanilla beans not extract. Fats pull out constituents that alcohol based extracts can't.

"Butter is composed of short, fatty amino acid chains that, when heated, can unbind and float free, resulting in tiny volatile molecules that are easily picked up by the nose. The compounds in vanilla beans are more soluble in fats than in water, make a fat infusion preferable to a tea or directly into a (mostly water) batter. Brown butter must be heated to 250F for the milk proteins and sugars to brown. From Kate Zuckerman, The Sweet Life.

Scrape out the tiny black seeds from the bean and place with the butter in a pan over medium high heat. You will cook until the mixture carmelizes and emits a nutty rich vanilla aroma. Turn the heat down to medium as the white foam starts to form. Eventually, you will notice brown speckles in the white foam, then a universal beige brown color and nutty aroma. The butter will turn from yellow to golden yellow. If you overcook the butter it will turn acrid.
